Cabbage---Crunchy, refreshing, sweet! I said this about the peas last week. The same can be said about this cabbage. Eat some raw mixed in with a lettuce salad and/ or make a cabbage salad on its own: sliced cabbage with a dressing of vinegar of choice mixed with a bit of olive oil and garlic. To jazz it up add a bit of honey. Try the recipe below. It’s a repeat but it has gotten rave reviews, especially from former cabbage haters!
Strawberries---Another basket of sweet, delectable strawberries.
Lettuce/ Arugula---I hear it’s a small head this week. That and some more arugula. Mix them together for a salad or two or three.
Broccoli---I hear you are getting side shoots. These tender little heads are what grow after the main head has been harvested. Come on out to the field to see for yourself. I always think it’s so cool. It’s such an efficient plant. Stir fry some up with other stuff in the box, eat raw or just steam and eat. Easy!
Beets and their greens---Talk about efficient! Here you get two for one! Steam, boil or roast the beets. No need to peel them before cooking: just wash the dirt off. The skins will slip off when cooked. Wash, chop and steam, boil or saute the greens. They cook up like spinach and chard and are so delicious, not to mention nutritious!
Pak Choi and Rapini---Nice Greens to stir-fry. With all the greens in the box. We think you should stir fry up a bit of everything in one stir fry meal for, as Erica says, “a super nutrient kick with a variety of green flavors and textures.” Try it. Let us know what you think. Talk about quick and easy!
Basil---Just a bit to add to salad, stir fry or what have you.

Cabbage for Those that Hate Cabbage
from Recipezaar.com---thanks, Lisa!

2 tablespoons butter or margarine

1 tablespoon canola oil
8 cups shredded green cabbage (about 1 normal-sized head)

1 tablespoon packed brown sugar
3-4 garlic cloves, minced (I use 4),

1 tablespoon red wine vinegar,

salt, fresh ground black pepper

1.) In a large skillet, heat butter and oil over medium heat; add cabbage, garlic and brown sugar to pan.
2.) Sauté until the cabbage is limp, about 5 minutes or so.
3.) Reduce heat to medium-low and stir in vinegar.
4.) Cook, stirring very often, for approximately 20 minutes; taste and if cabbage is too crunchy for you,
continue to cook for a few more minutes.
5.) Add salt and pepper to taste and serve.
