Watermelon
--They’re big so you only get a half. Yummy. Eat and have a seed spitting contest!
Melon---Ambrosia. These are really flavorful sweet melons. These are good just eaten by themselves or with some cottage cheese or yogurt. You can also make “Agua” by peeling, cutting into cubes and putting into a blender with water to taste. Pour over ice for a nice refreshing drink.
Tomatoes---How about a tomato salad with tomatoes, basil, and some fresh mozzarella. Divine! Make the tomato sauce recipe below. It is easy, good and if you like you can freeze it. See how easy it is and get more tomatoes so you have some frozen sauce for the winter ahead. Even if you don’t have a lot of freezer space, you can put up sauces in cottage cheese type containers or quart freezer bags. Both stack quite well.
Basil---Here’s a nice bunch to make more pesto if you like. Refresher: basil, garlic, olive oil and Parmesan cheese blended up in food processor. Freezes great. Wonderful to have pesto in January. Add some to the spaghetti sauce as well.
Garlic---For all garlic needs such as pesto, sauteed vegetables, tomato salad, etc, etc, etc.
Summer Squash---Add some to the tomato sauce recipe to give if a bit more “heft.” Bake some chopped with a garlic or two, a tomato or two and a pepper. Oh so good and easy.
Cucumber---Lemon. Add some to the tomato salad. Make a nice cucumber sandwich like a couple of our British farm stand customers. Refreshing! Make this salad that Wayne just made for dinner: a couple of chopped tomatoes, cucumbers and a sweet pepper with a hint of garlic. Stir around with barely a touch of seasoned rice vinegar and olive oil. Let sit for a few minutes so the flavors can come together. Try it, it was delicioso!
Sweet Peppers---Marconi. These are good in salads but exceptional sauteed up. Heat a little olive oil and garlic. Add sliced peppers and saute very slowly until really limp, about 25 minutes. Then melt some good mozzarella or other cheese on fine toasted bread and add a pile of the peppers. Top with a tomato slice and you’re good to go! If you make the tomato sauce, you can also add a pepper to it.

Spaghetti Sauce
All amounts approximate

2 to 3 Tbsp. olive oil

4 cups peeled tomatoes*
1 1/2 cups chopped onions

1 sweet pepper (optional)
1 Tbsp. or more, chopped garlic

2 Tbsp. or more fresh basil/ parsley
1 Tbsp. oregano

A bay leaf or two

salt and pepper to taste

Heat the oil and sauté the onions until golden brown. Add the garlic and tomatoes. Simmer, partially covered, for about 15 minutes. Process in a food processor or blender. Return to the pan; add the rest of the ingredients. Simmer for about 30 minutes. Serve over pasta and top with Parmesan cheese.
* Peeling tomatoes is quite simple. Core and put into boiling water for a little less than a minute. Put into ice/cold water. The peels should slip off. If they don't put into the boiling water a bit longer.

VISIT THE FARM: Please come on in for a visit whenever you can and bring the kids!

EGGS---Our chickens are starting to lay their eggs! Hooray. These beautiful and delicious eggs are available at the Farm Stand. Better watch out, though: the customers at the Ferry Plaza Farmers' Market would take them all if we'd let them. You all get priority! Come check them out and see what a really fresh egg looks and tastes like.
