Heirloom Corn

Alongside our successive seasonal crops of fresh, sweet corn, the farm reserves space for dried corn varieties. Harvested at full maturity, we process dried corn throughout the fall, winter, and spring to offer a cornucopia of goods.

From fresh cornmeal for polenta, bread, muffins, and cookies to popcorn, masa, and tortillas, our dedication to quality extends to a diverse range of corn products.

Our farm produces 50 pesticide-free chili varieties, which are meticulously slow-smoked and dried on site for unparalleled flavor. From cultivation to harvest and preservation, our hot chili products showcase a heat range from 0 to 10, allowing you to tailor flavors and spice levels to suit your taste buds.

Fresh Chile and Pepper Varietals: New Mexico varieties and our hottest Habanero and Cayenne, sold both fresh and dried. Elephant Ear, Jimmy Nardello, Shishito, Padrone, Flaming Flare, Sweet Snack Peppers, Gypsy, Habanero, Non-Hot Habanero, Hungarian Wax, Shishito, Fresh Calabrian.

Dried beans, many with heirloom origins, have become a winter staple and specialty crop at Tierra Vegetables over the years. We produce 20+ varieties that are harvested, dried, threshed, and cleaned throughout the summer and fall seasons. Note that beans are seasonal and our inventory varies.

Available for rent, our 3,200 square foot kitchen is a hub of possibilities. With double stand-up convection ovens, burners, prep tables, and a spacious walk-in fridge and freezer, it's fully equipped with everything you need to preserve your latest harvest, cater your next big event, or test out a new commercial recipe.
